That Time I Took a Class to Help Me Find Love

Note:  As you read my story below, know that this very class is kicking off again in a few weeks.  If you’re interested, I highly recommend you apply soon as it will fill up….

A few weeks back, I went on a work trip to my corporate headquarters with a few of my favorite colleagues. We (as usual) tore up the town and had a complete blast. Seriously, how can you not have a great time in Southern California.

With that, I got home the next day and got a really nice call from one of the guys. We speak most days, but on this day he said to me… “Can I ask you a personal question?” And, I usually know this question… I can see it a mile away.  So, of course, I said yes, and he asked the question I’ve received so many times from kind people over the years.

“Why are you single?”

And then, the conversation began and I shared what I believe to be my reasons. Yes, I’m single. Yes, I’ve been single for a while. Yes, my heart has been crushed a few times. I don’t get out enough. I never meet anyone interesting… and the list continued.

As is typical, he shared that my colleagues were talking about me and how they hope I meet someone awesome. Too kind.

I definitely recognize that I’m single, but truthfully, I don’t think about it all that often. I don’t dwell on it, and honestly, my life is pretty awesome, even without someone to share it with. But when someone brings it up, it sort of hangs around for a few.

That night, it was stuck in my head. I couldn’t help thinking about it. So, I did what we all do… I went on Instagram to distract myself. I mean, how fun are Instastories, afterall? Hours of amusement right at your fingertips.

And, as though the universe was sending me a sign, I clicked on the stories posted by Rachel Dealto. You guys know Rachel, right? She’s one of the matchmakers on Married at First Sight and incredibly relatable. Well, that very same day, Rachel announced via instatories that she was accepting applications for a virtual love coaching class called Unlock Love.  If timing of the conversation I had + this announcement wasn’t a sign that I needed to participate, I don’t know what is. I quickly applied, and waited to see if I’d be accepted. I wondered if Rachel would be up to the challenge of accepting a super-single girl like me… well, she did!

In my life, I’ve taken classes on how to knit, how to make tamales, and to learn so many other life skills. It only makes sense that I’d take a class designed to help me in this area of my life as well… and who better to engage than an expert in the field from one of my favorite shows!

The class is conducted via video chat, led by Rachel and takes you through six weeks of sessions designed to help you find the love you are looking for.  From incorporating a daily mantra to rewiring negative thoughts to rewriting your online dating profile, Rachel sets you up for success in the (what can be an intimidating, at least to me) dating world.  I keep a busy schedule, but you’d best believe my butt was in class every week, regardless of what else was going on!  So worth it!

Every week, I completed “homework”, sharing back with Rachel my thoughts, history, and goals. Reviewing my work, Rachel provided with suggestions and guidance and an opportunity to contribute to the weekly video sessions as well. I know, no one likes video, I know, but it really helps you to be part of the experience. Focused, present, and connecting with the rest of the group. I promise, it’s fine.  The picture below is from one of the live sessions with Rachel sharing her wisdom.

In addition to the weekly sessions and completing homework, Rachel also assigned each of us an accountability partner. I can’t tell you how much help this partner has been to me! We’re still in touch today, and it’s nice to know that there’s someone going through a lot of the same things… and there to listen to your process. We also have a private Facebook group which has helped me connect with a few others in the class. Seriously, the group dynamic rocks. It’s like I have my own set of cheerleaders now rooting me on my next steps with this process.

And, Unlock Love also gave me an opportunity to refresh my vision board, with a specific spin toward finding love!  By now, you know I’m pretty artsy, so I went all out… especially since this thing is hanging on my wall!

My big takeaway from this class: If I never make time for love, I’m never going to find it.   Ultimately, while I have a ton to offer, he’s not just going to show up at my door (and we all know I don’t answer my door to strangers anyway). So, this class was really the first step toward finding an awesome man to share my life with and frankly, to letting go of some of the nonsense that’s been holding me back.

While I haven’t found Mr. Right quite yet, I feel like I have a greater understanding of what I need, what I want, and some new tools about how to find him.

NTTC Simple Inspirations Winner: Game Day Trio

I’m wrapping up my third year of judging Jenny Craig’s Simple Inspirations recipe contest, and I’m thrilled to announce my 2017 winner!

Before I do, I have to tell you that there was SO MUCH creativity this year in entries and so many new ideas shared on how to make my favorite Jenny Craig dishes and combinations that I’d never thought of.

Between us friends:  When I saw the winning recipe, I knew immediately that I wanted to make it.  When I had a chance to taste it, I was completely won over.  The addition of spinach, artichokes, tomatoes, roasted red peppers, onions, and cauliflower were enough to catch my attention, and enough to create the most filling game day meal I’ve ever enjoyed!

AND THE WINNER IS….

You guys, this recipe knocked my socks off and here’s why:  The cauliflower coated in a hot sauce-roasted red pepper puree is GENIUS!  The flavor is incredible, and who doesn’t love buffalo cauliflower.  The inside of the potato scooped out and baked into little tater tots is such a treat.  Lastly, that loaded spinach-artichoke potato skin is so filling and delicious.  You guys are going to LOVE this recipe!  Can’t wait to hear your feedback.

Game Day Trio

Serves 1

INGREDIENTS

1 Jenny Craig Loaded Baked Potato

1/4 cup chopped frozen spinach, thawed and drained

1 3/4 cups cauliflower florets

1/2 cup quartered artichoke hearts, canned (approximately 6 quarters)

3 Tbsp diced white or yellow onion

1/2 tsp spicy brown mustard

1/2 Tbsp hot sauce

1/4 roasted red bell pepper, canned or jarred, oil-free

Non stick cooking spray

2 Tbsp tomato, diced

Fresh herbs to garnish (chives, parsley)

INSTRUCTIONS

1.  Preheat oven to 400 degrees. Microwave Jenny Craig Loaded Baked Potato for 1 minute, and separate the filling from the potato skin. Set aside.

2.  In a microwave safe dish, cover and microwave cauliflower florets for 4-6 minutes, or until fork-tender.

3.  Saute onion in non stick cooking spray on medium heat for 4-5 minutes, or until lightly browned

4.  Add onion, spinach, 1/2 cup of the cauliflower, artichoke hearts, and mustard to a blender or food processor, blend until smooth.

5.  Scoop spinach-artichoke mixture into the potato skin and place in oven-safe dish, and bake covered for 25 minutes, then uncovered for another 10 minutes.

6.  Add red bell pepper and hot sauce to a blender or food processor, blend until smooth, and use to coat remaining cauliflower. Bake cauliflower on oven-safe tray lined with parchment paper for 10-12 minutes.

7.  Microwave the Jenny Craig Loaded Baked Potato filling in microwave-safe dish for 4 minutes and scoop into balls with melon baller or ice-cream scoop.

8.  Bake the potato bites at 425 degrees for approximately 15 minutes.

9.  Top spinach-artichoke potato with diced tomatoes.

10.  Enjoy!

Obviously my Daily Blog has turned into a…..Every Few Days I Blog….kinda thing.

Last week in the Weight Watcher Meeting room we talked about Time Management. I’ve been trying to practice my own time management by spending less time on my computer and less time on my phone.

I feel like I’m at a place right now in my life where the computer and the phone need to occupy less of my time.

I really enjoyed spending time in the kitchen on Sunday with the windows open and I’ve worked at spending more time outside these last few days soaking up that fresh air and enjoying these 70 degree days. There is just something about that 70 degree temperature that heightens my mood. Always has.

This weather also has me craving soups, stews and big bowls of comfort food.

I made Meatloaf on Sunday, and while that was baking, I also made a big pot of soup for the rest of the week.

Do you ever just start throwing things together and it ends up being one of the best meals that you think you’ve ever made and you know you’ll never be able to re-create it? Well, that’s what happened with this soup. Mike gave it 5 stars!

I’ll give you the basics then you can give it a try. I really don’t think you can mess up a simple soup, and really that’s all that this is.

 

Cook ground turkey (or beef) with diced onion, celery and garlic. Add broth of your choice (I used beef), lots of veggies and season as desired.

I used carrots, mushrooms, potatoes and canned peas as my veggies.

I seasoned it with thyme, oregano, a bay leaf, salt and pepper. I added a little bit of tomato paste.

I wanted to thicken my soup up, so I cooked about 1 cup of diced potatoes covered in broth, then used an emersion blender to puree it.

 

I added that to my big pot of soup and it really did the trick!

Tada!! Simple soup that will last through the week. I’m guessing it’s about 4 SmartPoints for 1 Cup.

 

I added a Banana with 1 tsp Almond Butter, Chia Seeds and 1 tsp Honey for dessert.

 

I put the Waffle Iron to use yesterday and made Mike and I waffles.

Breakfast – 8 SmartPoints

Big Ass Waffle recipe (3 SP) topped with 1 tsp Cocoa Nibs (1 SP), 1 T Pumpkin Butter (1 SP) and 1 T Pure Maple Syrup (3 SP)

 

I met with the oncologist yesterday and I still have some decisions to make.

Menopause in the middle of everything that is happening with my body has changed up a few things.

I love the team of doctors and nurses that I am working with at KU. They really do put all of the options out there for you, but ultimately, they leave a lot of decisions up to you.  A huge part of me loves that I am in charge of my health and the decisions that determine my future. Another part of me just wants the professionals to tell me what to do.

Some days feel extremely overwhelming. Yesterday was one of those days.

Yesterday also happened to be our son Jakes birthday. We were looking forward to having dinner with him, his wife and daughter. Mike and I took the convertible to dinner and I left my overwhelming thoughts at home for the evening.

 

I’m going to Dallas tomorrow after working my WW meetings to visit Tucker (and my daughter Tess and her fiancé Manuel). Tucker went to live with them before my mastectomy.  Tess found Tucker when she was in college, and Tucker living with Tess someday has always been the plan. Tess decided the timing was right and I agreed.

Tucker lived a very neglected first year and a half of his life before Tess found him almost 6 years ago. Due to the neglect, he has been a challenge with house training, but also such a joy. I’ve never met a sweeter dog.

Loves all people. Loves all dogs. Loves to snuggle.

He even posted on his own Instagram page for a while.

This summer, Tucker was having some tummy issues, but I assumed he had gotten into something in the backyard. It never seemed to last more than a couple of days, so I didn’t pursue having him checked out. Long story short, Tucker has really been having some tummy issues since moving to Dallas and has now been diagnosed with a intestinal disease. I’m going to visit him because he isn’t doing so well. Welcome to 2017.

I’ll be back next week.

I’m going for a walk and leaving my phone at home.

Wait. I could trip and fall, get bit by a dog, attacked by a bird. It is 2017 ya know. I’ll take my phone.
