S’mores Donuts


Donut Ingredients
Directions
  • Preheat oven to 375F
  • Mix the dry ingredients together, then add the wet ingredients and mix well.
  • Lightly spray your donut tray with some nonstick spray and then divide the mixture into your donut tray trying to keep the mixture as equal as possible in each individual donut mould.  
  • Bake for 10-15 minutes
Makes 6-8 servings depending on how you divide out the mixture.  6 donuts is 2 SmartPoints per donut and 8 donuts is 1 SmartPoints per donut.

Chocolate Icing Ingredients

  • 2 teaspoons sifted icing sugar
  • 1/2 teaspoon sifted unsweetened cocoa powder
  • 1 teaspoon water (more or less depending on how thick or runny you want your icing to be)

  • Mix dry ingredients together add in the water a little bit at a time so that you are able to control the thickness of your icing.  
  • Drizzle chocolate mixture over all the donuts evenly and enjoy!

Chocolate Coconut Oatmeal

Ingredients
  • 1/2 cup quick oats
  • 1 mashed banana
  • 1/2 teaspoon chia seeds (optional)
  • 1 tablespoon unsweetened cocoa powder
  • 3/4 cups water
  • 1 tablespoon sweetened shredded coconut

Directions
  • Mix everything together in a microwave safe bowl, except the shredded coconut.
  • Place in microwave for 1.5 – 2 minutes 
  • Add shredded coconut to the top and enjoy.

Recipe makes 1 serving at 6 SmartPoints.  If you use unsweetened shredded coconut your oatmeal will be 5 SmartPoints.

Magical Sweet Potato & Sausage Quinoa Bake

I decided to add the word magical to this recipe title because I truly believe that it is.

One of my employees recommended this recipe to me this week and while I usually trust her recommendations, the idea of kale, sweet potato, and quinoa just seemed a little too whole foodsy for me.  Yep, I just made whole foods an adjective.  It’s fine. 

Just the same, we don’t share recipes that often on the job so I knew there had to be something special about this one.  Over the weekend while wandering Trader Joe’s, I saw a bag of kale and decided to try it.

You guys, the results were incredible.  So incredible that I want to make a second batch immediately to enjoy throughout the week.  I ate it for breakfast on Sunday morning and it was perfectly filling!

Magical Sweet Potato & Sausage Quinoa Bake

Adapted from Spinach for Breakfast

Serves 6

INGREDIENTS

1 cup dry quinoa, rinsed

2 1/2 cups of water

2 medium sweet potatoes, peeled and chopped

4 cups kale, chopped and stems removed

4 links Trader Joe’s spicy italian chicken sausage, sliced

sea salt & pepper

2 oz. shredded Trader Joe’s cheddar-gruyere cheese

INSTRUCTIONS

1.  Preheat the oven to 350 degrees.

2.  Chop your sweet potatoes.  Place sweet potatoes on a baking sheet prepared with cooking spray.  Spray lightly with cooking spray, and season with salt & pepper.  Bake 35-40 minutes until sweet potatoes are tender.

3.  Place the 1 cup of quinoa and 2 1/2 cups of water into a small saucepan.  Bring to a boil, then cover and simmer for 10-15 minutes until all of the water is absorbed.  Fluff and set aside.  I used a rice cooker to make mine.

4.  Add your kale and chicken sausage to a skillet prepared with cooking spray. Season with salt and pepper. Saute at medium heat until the kale begins to crisp slightly and the sausage is browned.

5.  In a large bowl, combine the quinoa, sweet potato, kale and chicken sausage together.

6.  Pour the mixture into a large baking dish, prepared with cooking spray.  Top with cheese.

7.  Bake for 10 minutes at 350 degrees until the cheese is melted.

8.  Serve and enjoy!  I’ve since enjoyed this dish as a lovely savory breakfast as well.  And, I’ve made a second batch already!

Apple Pie Oatmeal

Apple Pie Oatmeal

This is my go to oatmeal over the colder months.  It is super easy to make, low in points and tastes like you’re eating dessert for breakfast.
Oatmeal Ingredients
  • 1/2 cup quick oats
  • 1 mashed banana
  • 1/2 teaspsoon chia seeds
  • 3/4 cup water

Directions

  • Combine all the oatmeal ingredients into a microwave safe bowl and mix well using a fork.  I find that using a fork gets a bit of air into the mixture with results in a creamier texture.  
  • Place in the microwave and cook for 90 seconds, depending on how you like your oatmeal you might need to cook a little less or more.

Cooked Apple Ingredients
  • 1 apple diced, it’s up to you if you peel it or not
  • 1 teaspoon ground cinnamon 
  • 1 teaspoon cornstarch
  • 1 packet of sweetener of choice (optional)
  • 2 tablespoons of water

Directions

  • Combine all the cooked apple ingredients into a microwave safe bowl and mix together well.  Cover the bowl with plastic wrap or a plate and microwave for 90 seconds.  Take the mixture out, stir and put it back into the microwave covered for another 90 seconds. 

Makes 1 serving at 4 SmartPoints
