Jenny Craig Recipe Creation: Turkey Burger Chili

Now that the Simple Inspirations recipe contest is in full swing, it’s got me reminiscing of all of the recipes I’ve made in the past from my Jenny Craig meals.

After a quick scroll through the early days of NTTC, I found that my early recipes just aren’t as pretty as the recipes that have come more recently.  While the flavors are delicious, the pictures definitely don’t do them justice, including the original post of this Turkey Chili.

I’m also fully recommitted to the Jenny Craig program (and down -3.9 lbs. in the first week!) so what better time to try to pretty up my recipe collection!

This chili did not disappoint… such an old fave, and I definitely have some ideas on how to make a spicier version of this chili in the future.  Spoiler Alert:  you’re going to love that one too.

Turkey Burger Chili

Serves 1

INGREDIENTS

1 Jenny Craig Turkey Burger

1 can fire-roasted tomatoes

2-3 tsp. Penzey’s Chili 9000 Seasoning or your favorite chili powder

1 Tbsp. minced shallot

1/4 cup sliced onions

1/4 cup diced red pepper

salt and pepper to taste

dash of cayenne pepper

cooking spray

 
INSTRUCTIONS
1.  Prepare your turkey burger per the package instructions and separate your burger from the bun.  Place the cooked burger in a food processor to chop it well to a ground meat texture

2.  Saute peppers, onion, and shallot in a medium sauce pan, prepared with cooking spray.  Cook for 3-4 minutes, stirring frequently until vegetables are tender and aromatic.  Lightly dust with salt and pepper.

 3.  Add the turkey burger and add chili powder and cayenne.  Stir to combine, lightly toasting the spices.

4.  Add the can of tomatoes, and stir once again.  Allow the mixture to come to a simmer, simmering for about 6-8 minutes so that flavors can combine.  Taste the combination to assure your chili is seasoned well.

5.  Spray your bun lightly with spray butter and brown in your toaster.  Top with garlic powder or Everything Bagel Seasoning, for a tasty toast.  Serve it with your chili.

6.  Dig into your chili and enjoy!

Fat People Still Have To Eat, And Sometimes I Don’t Want Salad

Right now I’m sitting in a hipster coffee shop drinking a latte that was so pretty that I didn’t want to touch it. They serve the biggest, most ridiculous doughnuts I’ve ever seen, and I’ve been to some pretty ridiculous doughnut shops. The lattes here are too delicious to express with words, and on this day of rest, I decided to indulge in (part of) a doughnut. They’re so big that if I tried to eat it all I’d probably end up at the emergency room, or maybe I’d just feel sick. I don’t intend to find out. I spend a lot of time sharing my thoughts and ideas – on social media, here on the blog and in person with friends and family. I’m honest about my journey, struggles and victories, and it helps me keep track of where I’ve been and where I’m going. Being as open as I am also invites judgement, sometimes even from well-meaning people who just don’t have a clue.
