Healthy and High Protein and Delicious Recipes? Yeah, We Love Those!

If you know me,  you know I love good food. I’m also a big fan of recipes that are high in protein. I enjoy cooking, and my friend, Elaine, does too, so I invited her to share a post on my blog today. I’ve known Elaine for about a year and a half, and throughout that time I’ve watched her consistently work toward being healthy and strong, and she has more self-discipline in eating and exercise than anyone else I know. We’re different in some ways, but we love some of the same things as well. I’m so thankful to have a friend like her, and I’m also excited about sharing this recipe with you today. Here’s what Elaine had to say about her recipe: “This recipe uses a great new brand of pasta called Banza. Instead of pasta made from wheat flour, Banza is made from chickpea flour. This gives the pasta a lot more fiber and protein than usual pasta. The pasta is slightly chewier than regular wheat pasta, but it’s still great. So long, August… you beautiful thing, you.

I had a blast in August.  Loved it.  Can’t wait to see what comes in September as the temps cool off a little.

CURRENT BOOK

I don’t think I read a darn thing last month.  Nope, just headlines, social media posts, and the mail…

In the month ahead, I’ve got my eyes on Liane Moriarty’s What Alice Forgot.  I tried to read this one a few months back and didn’t.

After reading Big Little Lies and loving it, I think it’s worth a second try.

CURRENT ECLIPSE VIEWING EXPERIENCE

Oh, the Eclipse.  I was planning on taking a quick lunch break, peeking at this celestial moment, and then going right back to my desk.  But then… I found an event that I thought would be the perfect way to enjoy the eclipe:  Yoga Under the Eclipse at Urban Sanctuary.

Not only did I have an opportunity to complete moon salutations under the eclipse with an amazing group of yogis, but I also met this incredible space.

The class was a series of grounding poses that took place outdoors, with plenty of breaks so we could peek at what was happening in the sky.  Denver was about 92% eclipsed… and I loved every minute of it.

CURRENT SONG

We’re all listening to Taylor Swift’s new song Look What You Made Me Do, right?  It’s a little angsty for where I’m at right now… but it’s catchy for sure!

Of note, this month is about Taylor… but next month is 150% dedicated to my girl Kelly Clarkson who has a new album coming out!!!

CURRENT WINE LOVE

You know, I love some rosé.  I found a site that does rosé home delivery…. of some of my favorite labels, including the appropriately named Summer Water!

CURRENT DONUT SITUATION

Have you guys ever heard of Doughbar Doughnuts?  After seeing many of you post on Instagram that you were eating healthy donuts, I had to see what this was all about.  And, you guys… I was pleasantly surprised!  And, the donut (plain) has 150 calories and 11g of protein!

I ordered a variety four-pack so that I could try a few flavors, and they were so so good, the Reese’s flavor being my ultimate favorite!  And, who doesn’t enjoy decorating and eating donuts??? So fun!

Tip:  Follow the instructions in the box.  Heat up the donut and the frosting for the best flavor and experience.  I’ll be trying these again!

CURRENT RECIPE ON REPEAT

I shared this new recipe on Saturday, and I’ve made it twice all ready.  I cannot get enough of this beet salad, y’all.  If you’re a fan of beets, you’ve got to try it!

CURRENT DENVER RESTAURANT LOVE

Every once in a while, I have a chance to be hosted by a local restaurant to sample their menu.  This Friday night, Marisa from Uproot Kitchen and I were completely spoiled by Max’s Wine Dive – Denver.  With locations across Texas and in Denver, if you’re within proximity of a location, I’d highly recommend you stop by.

From pulled pork stuffed chile peppers to cracklin chicken to bananas foster bread pudding, it was an amazing night of food with special wine pairings for each.  Thanks, Max’s, for a beautiful evening!

CURRENT BLEISURE EVENT

Have you heard of this word?  Bleisure?  It’s when you combine business and leisure, specifically as it relates to travel.  Earlier in the month I had to make a quick trip to Baltimore to visit a colleague for a planning session, and it just so happens that the lovely Ashley from Balancing Today was still on maternity leave and available for lunch!  So so great to see her and to meet Baby Kinnick!

CURRENT OFFICE UPDATE

I’ve always thought my home office to be “done” from a home improvement perspective.  When my floor lamp started flickering last week, I knew an update was in order.  I went to Target – Nothing.  I went to Homegoods as well.  Here I found a potential lamp, but a tiny voice in my head told me to head to Scandanavian Designs.

With the store closing in ten minutes, I found this gem.  I really like it.  Adds some height to the room, which I like.  It’s a little bright, but smaller watt lightbulbs can fix that.  Ultimately, it’s nice to be able to see in the office in the evenings again.

CURRENT COOKING EXPERIMENT

You guys, I’m a little obsessed with pickling.  I’ve pickled onions, beets, and now I’ve pickled something a little weird.  Weird in a delicious kind of way.  Stay tuned, because these bad boys are coming to the blog soon…

Married Life, Weight Watchers, Friends and Stuff

It’s been a beautiful week in New Orleans, and I’m hope that this weather will continue through August. This is typically the worst hottest month of the year, but the first day was splendid. Window washers cleaned my windows last week too, so we’re enjoying the view from the sofa with the blinds open a lot right now. Michael and I have been adjusting to married life, and the last few weeks have been pretty great. We feel at home in our new church, and we’re finding our way into new living patterns – spending time together and giving each other space. I haven’t found a good groove with Weight Watchers yet, but I’m not giving up. My weight has not changed much at all since I got married. In some ways that feels like a win, but it’s disappointing too because I know I can do better. My weight just hasn’t been the focus, so I’m not going to beat myself up for something that I’m not making a priority. My clothing size is still changing though. A few months ago I was wearing 24’s in everything, and right now I’m much more comfortable wearing 20’s in most things. […]

Turning the Page

I’ve never enjoyed saying goodbye, and sometimes even the best changes are hard to accept. I knew for more than several months that it was time to start looking for a new church home, but I didn’t want to. I invested so much in my last church, and they invested a lot in me. When I was hurting and broken my pastor and his wife loved me. I made friends who showed me what a godly marriage looked like, and I discovered a lot about my talent, the purpose behind it and the drive that I felt to go deeper…in my relationship with God, in serving my friends, neighbors and community and in seeking to live out the fruit of the Spirit in my life. If you know me, or if you follow my journey at all, you probably know that when I met Jesus it changed my entire life. It changed the way I perceived myself, and the way I view the world and other people. I learned that when people were mean and hurtful it was because they didn’t have peace. They didn’t have joy, and we’ve all heard that misery loves company. It’s true. I learned that […]

According to Weight Watchers Fruit is Free Unless You Blend It

I weighed in at Weight Watchers on Thursday after being gone for our honeymoon, celebrating the 4th of July and my birthday, and I’m happy to say that my weight stayed the same. After several days of lobster and other delicious food, coconut drinks and Prosecco I know that it’s time to get back on track. We celebrated my birthday with a few friends on Friday night as well, and I ate two child size slices of pizza. The celebrations haven’t stopped since we got married. Actually, they started before that when our close friends were married, and we’ve been celebrating ever since (about 7 weeks.) I’m definitely not complaining, but all of this fun is exhausting! I’m thankful to be back home and getting settled into married life. Now that all of the major life events are over (for now) it’s time to get back into a healthy groove. Michael and I both know how important it is to make healthy choices, and we’re striving to do it together. We’re at the point in which we don’t have anything interesting unhealthy to snack on, so we look to things like fruit and high-protein snacks when we want something. I’m […]
